All Jollity Farm cheeses are hand-made from the finest goat milk available – that of our Jollity Farm goats of course. All our cheeses start with milk which is rapidly cooled to maintain a fresh sweet taste. Our fresh cheeses are made from pasteurized milk. Our aged cheeses are made from raw milk and are aged at least 60 days. Many of the ingredients are grown on or within 50 miles of our farm. All of our ingredients are grown by human beings with love and respect for the land.
Vintage Lavender Sachets - Our sachets are made with a hand stitched vintage linen tea napkin, vintage ribbon, and are filled with our estate grown lavender blossoms.
Chevre - Our chevre is the consistency of a spreadable cream cheese and is sweet and mild. It is excellent as a spread and can be used in any recipe calling for “goat cheese”. We offer our chevre plain, with dried dill and garlic, with fresh basil and garlic (seasonal), with finely chopped habanero, or with dried sugared cranberries. If served by itself or as a spread, chevre is best served at room temperature.
Feta - Originally, feta was made from sheep milk, but is a recipe that is also excellent when made with cow or goat milk. Our feta is mild and sweet with that great salty aftertaste typical of feta. We sell our blocks of feta the traditional way in a brine which means it will keep almost indefinitely. Our feta is also available already crumbled and ready to add to salads, pizza, and many other dishes.
Marinated Feta - This is where we take our fine feta described above and cut it into small cubes and add them to a marinade of olive oil, fresh basil, garlic, and sun-dried tomatoes. Our marinated feta is great on salads or on a cheese plate. The oil can be used as a dressing for the salad or to stir fry vegetables or meat.
Ricotta - Our ricotta is firm but not solid and consists of a mass of small, moist, delicate grains. It is white, creamy and mild and is wonderful eaten plain or used as an ingredient in pasta dishes.
Princess - Our Princess is made simply of our milk, salt and rennet. The cultures in this cheese are those that occur naturally within the milk made by our goats in this very special little part of northern California. This aged hard cheese resembles a Swiss cheese in its nutty aroma and small naturally occurring holes. This cheese is best served at room temperature and is great by itself, paired with fruit or used in cooking.
Gouda - Being of Dutch descent, Kyleen has developed a wonderful goat Gouda. Gouda is a rinsed curd cheese which means that the whey is washed away during the cheese making process. Rinsing the curd creates a very smooth tight texture with a mild and slightly nutty flavor. Our gouda is aged for 60 days to a year. Allow the gouda to breathe for at least 10 minutes, preferably a half hour, before serving. Goes well with fruit, on sandwiches, and on cheese/deli plates.
Italian Farmhouse - This is Charley’s original recipe. It is an aged cheese with a nice piquant or tangy finish. Its texture and melting properties make it ideal for pasta dishes, salads, pizzas, or fillings for chicken or meat. It is best served at room temperature and makes a delicious addition to French onion soup.
Marigold Parm - Our version of parmesan is made with whole milk and is aged at least 10 months. The result is a nutty, tangy and flakey hard cheese that is terrific in pesto or any other recipe calling for parmesan.
Milk Caramel Sauce
Cajeta - Cajeta is a delightful Mexican confection. Our cajeta is cooked very slowly with sugar to create a beautifully complex and thick syrup. Cajeta can be served in a number of ways, like spread on a piece of toast or on crisp, simple cookies, on crepes, over ice cream, as a topping for a simple pound cake, with fruits, over baked apples - in other words, wherever you would enjoy a toothsome caramel flavor.
Lavender Stemlogs - Our stemlogs are made from our estate grown lavender stems, bundled for use in your fire place or barbeque. For grilling, soak several stems in water and add to the coals in the last 10-minutes of cooking. Adds a soothing aroma to your fireplace and a tasty smoky finish to your favorite grilled meats and vegetables.
Dried Lavender Flowers - Sold by the ounce, these flower heads come from our combination of lavandula and lavandin varieties here on the farm.
Fresh Lavender Bouquets (available in mid-summer) - Lengths of our bouquets range from one to two feet. The diameter where the string is tied is about two inches.
